The food is created to delight the eye as well as the tastebuds, with fusions of vibrant new flavours and colours brought together with the unique flair of Executive Chef, Paul Chard. One of his signature dishes in the restaurant is the teriyaki tuna skewers rested on top of a pappadum, filled with a fresh chunky salsa of mango, avocado, paw paw, cherry tomatoes and goat's cheese, drizzled with a Kakadu plum sauce. The menu displays an original combination of fresh flavours and seasonal produce to compliment both the adventurous and the more traditional tastebuds.

Passionate about quality and with an eye for detail, Paul is no newcomer to fine cuisine and comfort dining on the Gold Coast.

Paul has experience in every field of the hospitality industry and with his diverse knowledge and experience he has chosen Coolibah Downs to create the best qualities of dining, a perfect ambience, attentive service and innovative food. Paul also manages the catering for functions and weddings on the property and will be an integral part of creating and managing the fine dining experience to be had from the spa.
